May is a month of constant running against the clock …. I’m very pleased June is almost here!
All is up and running. Memduh is back at the Korsan Suites this year and says he has been getting lots of big hugs from past guests surprised to see him !
Yasar is very content this summer, his 15th year with us running the Korsan Apartments. He has a new baby son and his family are here in Kalkan with him full time this season.
The Fish Terrace has almost the same team as last year … no changes to the kitchen team, Ozay, Ramazan, Mehmet and 55 all still on the serving team with a few additional new faces. I have a great new recipe I want to try in the Fish Terrace this year. Claire and I try to sample at least one of London’s famous restaurants every winter and last January it was Dabbous on Whitfield Street. It was a fantastic evening and superb tasting menu but one course really stood out, fig leaf infused avocado broth. We are good friends with one of the co owners of Dabbous and, in exchange for a good plug (!), Oliver Dabbous the chef and creator of the dish has given us his recipe. We haven’t tried it out yet but hope to start experimenting next week and have it on the menu soon.
There are some new additions coming to the Korsan Meze menu too. Early next week we will add grilled baby squid with a drizzle of marinara sauce and char-grilled veal on the bone with garlic mushrooms and rosemary potatoes. We are also working on a fun soft drinks menu and tossing up between an Oreo shake or Chocolate Cluster Bomb or maybe a healthy Sweet and Sour Smoothy!
All construction targets were hit! The owners of Villa Halcyon, Villa Bono, Villa Dolly and Villa Clara have had their first stays in their new properties. The big renovations of this winter, Kalkan Retreat, High House and Villa Majorelle where all done on time and to budget. A pat on the back from happy owners is always a good feeling.
I am attaching a photograph of the Lojman. These are new apartments we built this winter for the Korsan Team. On the top floor Memduh is enjoying his studio apartment which has great sea views! The first floor is occupied by Yasar and his family. On the ground floor we have our talented bread chef from Meze, Davud with his family and on the lower ground floor a crowd of boys who all work in the various kitchens.
I managed to put the boat in the water a few days ago and hope to get some play time on it in June.
All is geared up for a good and happy season.
